Coconut Cake


So if you know me you know I LOVE to bake. Mostly because I love to decorate things and then devour them. I've been trying to invent some cake recipes that are based on a cake box mix. ( faster recipe=eat sooner) So every once in a while i'd like to share my creations and get feed back if you get a chance to try it out.

Quick Coconut Cake
1 box white cake mix
1 cup flour
1 cup sugar
1 tsp. salt
1 tsp. vanilla extract
1 tsp. coconut extract
4 egg whites
1 1/3 cup milk
2 Tbsp. water
1 cup sour cream
3 cups toasted coconut (divided)

Preheat oven to 325. Butter and flour two 8'' round pans. mix all dry ingredients along with 1 cup of toasted coconut. Then mix in wet ingredients and mix until smooth. Bake for 30 min. Let cake cool to room temperature and frost with buttercream mixed with 1 Tbsp extra coconut extract. Use remaining 2 cups of toasted coconut to sprinkle on top. Then try to be kind and share a little with your family and friends. (this is the hardest step!)
